Creating Black and White Images with Color

First open your image.
Next make a copy of your image and paste that copy into a new document.
To do this: Select your image by highlighting the image or pressing ctrl + a. Then click Edit>Copy.
Next create a new document and paste the image that you copied into that document.
To do this: Click File>New. A dialog box will open. You will need to set the Width and Height equal to your original image.
After you have the image pasted into the new document you what to make that image black and white. Here is a tutorial on creating black and white images. Or you can change the color mode to Grayscale by clicking Image>Mode>Grayscale.
Once you have your black and white image. You will want to make a copy of your black and white image and paste that copy into your original image. Make sure that your black and white image is on its own layer above the color image.
Next with you’re black and white layer selected use your eraser tool to erase where you want the color to show through.
After you have erased all the black and white areas flatten your image.
To do this: Click Layer>Flatten Image.
That’s it, you’re all done.
